8 Easy Mug Cake Recipes – Microwave friendly

Typically used for drinking your favourite hot beverages, a mug can also be used in so many different ways. From a penny collector to a pencil pot or a homemade candle, but it’s also very handy for baking delicious mug cakes. So we’ve decided to share some of the best mug cakes recipes we found online. All trialled and tested – we promise! Each recipe will (hopefully) take you less than 10 minutes to make in the microwave.

Honey Mug Cake

This easy honey mug cake is a quick recipe by Bespoke Bride, a crafts and DIY blog written by Emily and Jessica. We selected it because it only takes 4 minutes to make, and the ingredients are very common – so you probably already have them in the back of your cupboard?

Ingredients

• 2 tbsp squeezy honey (plus extra for drizzling)
• 2 tbsp butter
• 1 egg
• ½ tsp vanilla extract
• 4 tbsp plain flour
• ½ tsp baking powder
• 3 tbsp white sugar

Method

1. Melt the butter in your mug by microwaving for 20 seconds then add in the honey, vanilla and egg and beat until well mixed together.
2. Add the flour and sugar and keep beating until everything is combined.
3. Cook in the microwave for about 1 minute 45 seconds then allow to cool.
4. Finally, sprinkle with a little icing sugar and drizzle with honey!

Red Velvet Mug Cake

If you’re just as crazy about red velvet cake as we are, you’ll love this delicious recipe from The Novice Chef blog! This slightly chocolatey, colourful cake takes just minutes and comes out absolutely amazing!

Ingredients

• 3 tbsps milk
• 1/2 tbsp white vinegar
• 4 tbsps all-purpose flour
• 2 tbsps granulated sugar
• 1 tbsp cocoa powder
• 1/4 tbsp baking powder
• Pinch of salt
• 1 1/2 tbsps vegetable oil
• 5 drops red food colouring, optional
• Powdered sugar for dusting on top, optional

Method

1. In a large mug, whisk together the milk and vinegar. Set aside.
2. In a small bowl, whisk together dry ingredients (flour, sugar, cocoa powder, baking powder and salt). Add the milk/vinegar mixture, the vegetable oil and red food colouring. Whisk until smooth.
3. Cook in the microwave on high for 1 minute and 10 seconds. This recipe will rise and then deflate slightly since it’s being cooked in the microwave. Dust with powdered sugar and serve immediately!

Carrot Mug Cake

10 mins – Calories: 115

An extremely easy and light recipe, it could even be labelled “healthy”, because it’s only 115 calories. It’s a recipe created by Amy, a Californian baker blogger who made her hobby a full-time job.

Ingredients

• 3 tbsp white whole wheat flour or gluten-free* flour
• 3/8 tsp powdered stevia
• 1/8 tsp ground cinnamon
• 1/8 tsp baking powder
• 1/16 tsp salt
• 1/4 tsp unsalted butter or coconut oil, melted
• 1 tbsp plain non-fat Greek yogurt
• 1 ½ tbsp non-fat milk
• 1/4 tsp vanilla extract
• 18 drops vanilla crème stevia, or adjusted to taste
• 2 tbsp finely grated carrot (not store-bought pre-shredded carrots!)

Method

1. In a small bowl, whisk the flour, powdered stevia, cinnamon, baking powder and salt.
2. In a separate bowl, stir the butter, Greek yoghurt and milk. Then stir in the vanilla and vanilla crème stevia. Gradually mix in the flour mixture, about 1 tablespoon at a time, until just incorporated. Then fold in the carrots.
3. Spread the batter into the prepared ramekin. Microwave on 30% power for 3 minutes and 5 seconds.
4. Let the mug cake cool for at least 2 minutes.

Strawberry & Cream Mug Cake

It’s summer, the strawberries are in season! So why not make this quick mug recipe which is also gluten and wheat-free – with a delicious summer-themed taste!

Ingredients

• 3 tbsp almond flour
• 1 tbsp coconut flour
• 1/2 tsp baking powder
• 1 large egg
• 1 tbsp maple syrup
• 2 tbsp coconut cream
• 2 fresh strawberries diced
• 1 (13-oz) can chilled coconut cream (refrigerate can overnight for best results)
• 1 tsp sweetener of maple syrup

Method

1. In your mug, add all ingredients except the strawberries.
2. Gently stir in strawberries cut into small pieces.
3. Cook the cake for about 2 minutes. Allow the cake to cool a few minutes before adding the whipped coconut cream.
4. To make whipped coconut cream, add 1 tbsp into a stand mixer and add about 1 tsp of maple syrup. Whisk on high speed until soft peaks form. Pipe some onto cake.

Healthy Banana Muffin Cake

This gem is by Rhian, founder of healthymummy.co.uk, a health and weight loss online community. She is suggesting a healthy, full of fibre, banana mug recipe – perfect for a healthy and quick breakfast treat!

Ingredients

• 1/4 cup rolled oats
• 1 tsp honey
• 1/4 small banana, mashed
• 1 tbsp reduced-fat milk of choice
• 1 egg white
• 1/8 tsp cinnamon

Method

1. Add all ingredients in a large mug and mix well to combine.
2. Place mug in the microwave and cook on high for 1 minute. Check to see if the batter looks cooked through, if not, continue cooking at 30-second intervals until firm.
3. Serve immediately.

Vegan Chocolate Mug Cake

Made without egg or milk, the secret of this recipe is in the apple sauce used for moisture. The recipe comes from Rita, who is from Seattle, WA and previously wrote for the famous cooking site AllRecipes.

Ingredients

• 4 tbsps all-purpose flour
• 3 tbsps white sugar
• 2 tbsps unsweetened cocoa powder
• 1/4 tbsp baking powder
• 4 tbsps applesauce
• 3 tbsps soy milk
• 1 tbsp toasted flaked coconut or icing sugar (optional)

Method

1. Add all the ingredients together in a mug.
2. Stir until well combined. Sprinkle with coconut or icing sugar.
3. Microwave at the highest setting until mug cake has set and risen well, about 3 minutes.

Gluten-Free Vanilla Mug Cake

• 1/4 cup all-purpose gluten-free flour
• 1/2 tsp baking powder
• 2 tbsp s granulated sugar
• 1 large egg
• 2 tbsps vegetable oil or melted butter
• 1 tbsp milk
• 1/4 tsp vanilla extract
• Sprinkles, optional

Method

1. Spray a large mug with non-stick cooking spray. Stir together gluten-free flour, sugar, and baking powder in the mug. Add the egg, oil, milk, and vanilla extract. Stir until smooth with a fork or mini whisk. Stir in sprinkles if using.
2. Microwave on high for 60-80 seconds or until cake pulls away from the sides of the mug and the top looks dry.

Blueberry Almond Cake – Gluten Free

Kirbie, a very well-known San Diego food and travel blogger, shared this glorious blueberry almond mug cake recipe on her blog – it’s super fluffy, flavourful, and full of different textures! Plus, it’s wheat and gluten-free, so anyone can enjoy it.

Ingredients

• 3 tbsp super fine almond flour
• 1 tbsp coconut flour
• 1/2 tsp baking powder for a paleo version you will want to make your own baking powder rather than using commercial baking powder
• 1 1/2 tbsp maple syrup
• 1 large egg
• 1 tbsp milk you can use any kind, almond milk if you are keeping it paleo
• 1 tbsp olive oil
• 12 fresh blueberries
• 1 tbsp sliced almonds
• Powdered sugar for dusting to keep it paleo, you can make paleo powdered sugar with coconut sugar

Method

1. Add all ingredients together except the blueberries, sliced almonds and powdered sugar.
2. Gently drop blueberries on top.
3. Sprinkle sliced almonds over the surface of the batter.
4. Cook in microwave at full power for about 1 minute 30 seconds. Top with icing sugar.
